Keller's Vodka Rigatoni
Ingredients

Steps
- Bring a large pot of well-salted water to a boil.
- Heat a large skillet over medium-high. Cook the hot Italian sausage until crispy at the edges. Lower heat to medium, add olive oil, red pepper flakes, oregano, and crushed garlic. Stir until fragrant.
- Add the onion, season with salt and pepper, and cook until translucent, about 5 minutes. Add tomato paste and cook, stirring constantly, until deeply darkened in color — don't rush this, about 5 minutes. Turn off the heat so you don't burn down your house, then stir in the vodka.
- Cook the rigatoni in the boiling water until 2 minutes shy of al dente. Reserve pasta water before draining.
- Turn the sauce to high and reduce by three-quarters, about 2 minutes. Add the cream, bring to a simmer, then take off the heat. Add the drained pasta, , and most of the pecorino. Cook over medium-high, stirring vigorously, until the sauce coats the pasta. Add more pasta water if needed.
- Serve topped with remaining pecorino and fresh basil.
